What to swap for the weighty carbs?

I am not particularly a fan of complete abstinence of a food group unless people feel that they are addicted to it and unable to have a little of some foods. Like chocolate; for some it is just easier not to have any at all. Over the last few years there have been numerous stories and reported benefits of not eating carbohydrates. Indeed starchy processed carbohydrates (such as White pasta, white rice, potatoes without their skins, white couscous) do have little nutrient benefits and the added negative of being very easily digested and broken down in our bodies into sugar very quickly - which, if we've eaten more than our bodies need (which most of us do) will quickly be stored as fat. 

But what can we have instead? Good grains - such as buckwheat, spelt and quinoa- sweet potatoes or how about vegetables prepared and cooked cleverly so that we feel like we are eating spaghetti or rice but indeed we are having a healthy boost of nutrients, less calories and great carbohydrate in the form of more vegetables. 

Vegetables do contain carbohydrate.

Here are some options:

 
 
 
 

Cauliflower Rice

1 x cauliflower

1 tsp coconut oil

2tbsp of water

Sea salt & black pepper

Remove the cauliflower leaves the tough ends.

Either using a food processor or grater, grate the cauliflower into rice sized pieces

Add the oil to a large non-stick pan with the cauliflower and mix it.

Stir over a medium heat for about 3 or 4 minutes (adding the water as necessary) until the cauliflower is tender.

Serve immediately with your favourite curry recipe.

 
 
 
 

Courgetti  (Use instead of pasta)

 6 x large courgettes 

1 x tsp coconut oil 

2 Tbsps water 

I use a julienne peeler but you can use a spiralizer . Lie each courgette onto a chopping board and slide the julienne peeler along it to make them into courgetti (so thin long strips of courgette). 

Add the oil to a large non-stick pan with the courgette and stir over a medium heat for about 3 or 4 minutes  (add water if necessary) until the courgetti is tender.

Serve immediately with your favourite ragu recipe.
