Broccoli Tomato Salad

Broccoli Tomato Salad with endless possibilities 

This salad concoction is really delicious ( well, I love it!) and true to form it was also very quick and easy to make. 


Ingredients

2 x Brocoli 

1 x punnet baby plum tomatoes 

1 x Tblsp Mixed roasted seeds (or the 'Mucnhie' seeds are nice) 

Other additional options depending on what else you are serving and whether it is to be a meal in itself or a side dish: 

 - Samphire (seaweed) - which adds a lovely saltiness 

  - Asparagus spears 

  - Green beans 

For more of a meal/lunch box option I add: 

 - 1 x packet Merchant Gourmet Lentils with tomato & basil or grains or feta



Method

Chop 2 broccoli heads, (or tender stem broccoli) slicing the stems thinly and then the actual head into florets. 

Put the stem slices into the bottom of the saucepan and the florets with their heads up - so that the thicker parts are in the water as they take longer to cook and then the heads won't go soggy but will 'blanch' in the steam and blanch ( about 2 -3 minutes until 'not raw'. Or microwave

Cool quickly in cold water. 

Drain. 

Prepare and cook any other vegetables in the same way. 

Add to a bowl with halved baby plum tomatoes and a tablespoon of mixed seeds. 

Toss together with a cap of Lemon Olive Oil. 

Add any other ingredients that you wish
