Fish Tray-Bake

Ingredients:

6 x salmon fillets

Bunch of asparagus

2 x Packs of tenderstem broccoli

2 x Packs of fine green beans

2 x lemons....cut into quarters

250g cherry tomatoes

4 cloves of garlic

1 x 30g jar of anchovies (cut into smaller pieces)

Black Pepper

Method

Chop the woody ends off the broccoli, asparagus and green.

Put all the vegetables into a large roasting tray. 

Spread the anchovies fillets over the vegetables. 

Scatter in 4 cloves of garlic.

Lay the salmon fillets on top with skin side up. 

Squeeze the quartered lemons over the salmon and add to the tray.

Finish with everal good grinds of black pepper.

You can now cling film and put this back into the fridge until you want to cook it.

Put the tray in the oven and cook for about 15 minutes. 

Serve as is. Or for the hungrier folk with quinoa, sweet potatoes or boiled new potatoes.

If you want to add a touch of glamour you can add large unpeeled raw tiger prawns to the recipe too.
