Roasted Brussel sprouts and broccoli with tofu and delicious Tahini Miso sauce.

An easy recipe that is absolutely delisious.

PREP 20 MINs/30 MINS COOK.

320g Brussels sprouts, quartered.

One large head of broccoli chopped into florets.

200g firm tofu, cut into 2cm.

60g pistachios, chopped.

3 garlic cloves, thinly sliced.

1 tbsp tamari or soy sauce.

1 tbsp maple syrup (I used honey).

1 tbsp sesame oil.

Pinch of chilli flakes

Freshly ground black pepper.

FOR THE DRESSING

2 tsp white miso paste.

Juice of 1 lemon,

2 tbsp tahini.

1 tsp dried chilli flakes.

1/2 tsp ground black pepper.

60ml boiling water.

METHOD

  • Preheat the oven to 200°C/180°c fan/gas 6.

  • Put sprouts, broccoli, tofu, pistachios and garlic in a roasting tray. Splash over tamari sauce and drizzle over the maple syrup and sesame oil.

  • Roast in the oven for 30 minutes, turning half way through, until golden and lightly charred.

  • Whisk all the dressing ingredients in a bowl and set aside.

  • Remove the roasted brassicas and tofu from the oven and drizzle with the dressing to serve.

  • Enjoy.
