Roasted Brussel sprouts and broccoli with tofu and delicious Tahini Miso sauce.
An easy recipe that is absolutely delisious.
PREP 20 MINs/30 MINS COOK.
320g Brussels sprouts, quartered.
One large head of broccoli chopped into florets.
200g firm tofu, cut into 2cm.
60g pistachios, chopped.
3 garlic cloves, thinly sliced.
1 tbsp tamari or soy sauce.
1 tbsp maple syrup (I used honey).
1 tbsp sesame oil.
Pinch of chilli flakes
Freshly ground black pepper.
FOR THE DRESSING
2 tsp white miso paste.
Juice of 1 lemon,
2 tbsp tahini.
1 tsp dried chilli flakes.
1/2 tsp ground black pepper.
60ml boiling water.
METHOD
Preheat the oven to 200°C/180°c fan/gas 6.
Put sprouts, broccoli, tofu, pistachios and garlic in a roasting tray. Splash over tamari sauce and drizzle over the maple syrup and sesame oil.
Roast in the oven for 30 minutes, turning half way through, until golden and lightly charred.
Whisk all the dressing ingredients in a bowl and set aside.
Remove the roasted brassicas and tofu from the oven and drizzle with the dressing to serve.
